Description :

H&R recruiting firm is seeking  a sous chef M/F for one of its main client located in Bordeaux (33)

CONTRACT: Seasonal

SALARY: 1600€ net/ month + accomodation and transportation + 200€ bonus

Main tasks

Self-responsible management of the assigned kitchen position
Professional calculation, preparation and presentation of all meals/foods, according to the assigned position
Weight/cut and portion control according to the daily menu plan
Compliance with all recipes according to the menu plan
Supervision and overview of the product quantities in all storage rooms as well as at assigned positions
Joint responsibility for healthy and varied meals for the crew
Assistance in quality & cost control
Supervision of the hygiene in the entire kitchen area as well as the cold storage /storage rooms according to standards
Adherence to cleanliness and hygienic regulations in compliance with HACCP and  standards
Execution of weekly general cleaning at the workplace
Motivation of the kitchen team
Joint responsibility for the adherence to safety rules in the entire kitchen area
Temperature check of all meals before service
Supporting the Head Chef with orders and inventories
Documentation of breakage within the kitchen
Leading the kitchen team during absence of the Head Chef
Attending meetings during the absence of the Head Chef
Daily check and documentation of the cooling temperature according to HACCP
Daily execution of meal samples and their documentation
Cooperation with the restaurant/bar manger as well as the restaurant/bar team
Joint responsibility for cleanliness in the waste room as well as compliance with waste concept
Support of other departments if required
Additional tasks for the entire crew

Participation in the crew show
Assistance with the loading of goods and suitcases
Keep crew mess clean
Thorough execution of the safety role on board
