Located in the old buffet of the railway station in Meudon, neighborhood Belleveu, l’Escarbille welcome you in the decoration of bistro chic with the garden inside which is very nice in summer….
We decided to cross over the Seine to discover the cuisine of chef Régis Douysset formed in Bristol and in Grande Cascade.
The young chef of 34 years old, located in 2005, he get 1* Michelin Star.
The Chef works only with the best products of Rungi, bought the first day.
His plates are the masterpieces of harmony as well as the taste and the presentation. Among his specialities, le Croque Monsieur, Foie gras on the brioche caramelized by celery mush, or the Turbot with its light sauce with lemongrass with caramelized endive as side dish.
Let’s report the beautiful wine card that Annette, the wife of the chef, sommelier (wine specialist) invites us to discover.
L’Angélique is the second address of Chef Régis Douysse, on place there is his old “second” from d’Escarbille Alix Guiet, who is in the cooking. L’Angélique was opened in 2008, one year later the first Michelin Star…
